Beanie Bites

INGREDIENTS

4 pods Pappy's Pie Dough

3/4 cups refried beans

approx.8 oz. Monterey Jack cheese with jalapeno pepper

cut into 1/2” cubes

1 egg beaten

1 cup sour cream

2 chipotle peppers in adobo sauce minced

2 tablespoons minced fresh cilantro leaves

1/2 tsp salt

1/2 tsp chili powder

1 cup taco sauce


INSTRUCTIONSPreheat oven to 450°. On a floured surface, roll out the pie crust dough to approximately 1/8” thickness. Using a 3” biscuit cutter, cut out 16 circles from each crust.Using half the dough circles, place 2 TBSP refried beans in the center of each and top with 2 cubes of cheese. Moisten edges of dough with water and place remaining circles on top. Seal edges with a fork. Place on a baking sheet and brush with egg. Bake until golden brown, 10-12 minutes. Remove from oven and let cool on rack.Meanwhile, combine the sour cream, chipotles, cilantro, salt and chili powder. Serve warm, along with the taco sauce, as a dip for Beanie Bites or to spoon on top. Makes about 30 pieces.
