It is the day after a holiday feast, and your refrigerator is stuffed to the brim with leftover containers. Everyone starts to get hungry again but wants something different than yesterday’s meal. You can easily transform day-old mashed potatoes into a delicious, different, and very simple meal. You will just need a pod of Pappy’s pie dough, leftover mashed potatoes, and a few pantry ingredients to spruce up your leftovers.
Getting Creative With Holiday Leftovers
After a day of microwaving holiday leftovers, your family is probably bored of the same flavors meal after meal. Repurposing leftovers is a great way to use up what's in your fridge while bringing something fresh to the table. Leftover turkey can be reinvented into turkey tacos or enchiladas. Cranberry sauce can be used to make cranberry muffins. You can bake side dishes into savory pies. Get creative with your leftovers, and you never know, leftover pie might just become a family tradition!
Leftover Mashed Potato Recipes
There are plenty of uses for leftover mashed potatoes, such as potato pancakes, potato soup, or shepherd's pie. Mashed potato pie is one of our favorite ways to use leftovers while creating something new. The contrast between the creamy potatoes and the crisp, flaky pie crust is amazing. Start with cold leftover potatoes, mix with a few simple ingredients, and enjoy this delicious savory pie.
Ingredients for Mashed Potato Pie
Leftover Mashed Potatoes: You will need 2 cups of cold leftover mashed potatoes per pie. Start with them stiff, straight from the fridge.
2 Pods Pappy’s Pie Dough: With two pods of Pappy’s Pie Dough, you will easily create an incredible double-crust savory pie. The pie dough should be thawed but still chilled.
For the Filling: Just a few simple ingredients will take your leftover mashed potatoes to the next level. You will need 1 egg, ½ cup chopped onion, ½ cup shredded cheddar cheese, ½ tsp garlic salt, and 1 tsp Worcestershire sauce. Combine with your mashed potatoes for a delicious savory pie filling.
How to Make Leftover Mashed Potato Pie
Prepare the Crust: Start with 2 pods of Pappy’s Pie Crust Dough from the grocery store. Starting with a quality, premade pie dough will cut your prep time in half and deliver incredible taste and texture. Roll out each pod separately. Line the pie plate with one rolled-out pod. Save the second pod for the top of your pie.
Mix the Filling: In a large mixing bowl, combine the cold mashed potatoes, egg, onion, cheddar cheese, garlic salt, and Worcestershire sauce. Mix until thoroughly combined into a thick, paste-like consistency.
Assemble: Spread the mashed potato filling inside your pie crust. Lay the second pod of Pappy’s Pie Dough on top. Crimp the edges to create a seal and pierce vents to let steam escape.
Bake and serve: Bake in a preheated oven at 400°F for 40-45 minutes. Remove from the oven and let cool for 10-15 minutes before serving.
Pro Tip: Check the pie after 20 minutes. If the edges are browning too fast, cover them with aluminum foil for the rest of the baking time.
Serving Suggestions
We highly recommend serving your mashed potato pie warm right after baking. Pair with leftover holiday gravy for even more flavor! To make it a whole meal, you could serve the pie alongside a green salad or leftover roasted veggies. This pie is also a perfect freezer meal that you can prep now and enjoy later. After assembling your pie, wrap it tightly with plastic wrap and freeze until you are ready to bake it (up to 2 months). When you are ready to bake, you can bake your pie from frozen. Add 15-20 minutes of baking time, and cover the crust with foil to prevent overcooking.
